Sometimes, you just need a biscuit, don't you? And while cracking open a packet is alright, baking your own is much more fulfilling. Here's my take on a super easy three ingredient biscuit that anyone can bake themselves:
This peanut butter biscuit recipe is so easy (trust me, if I can do it, anyone can!) and only takes a few minutes to do. I would set aside half an hour from start to finish.
This amount will also make enough biscuits to fill a couple of trays, but you can easily halve the amount if you don't need to bake as many.
Ingredients:
- 250g of peanut butter (I used crunchy, but smooth is fine too!)
- 125g caster sugar,
- 1 medium egg
Method:
- Pre-heat your oven to 180C and line two trays with baking paper.
- Add the peanut butter and sugar to a bowl and mix them together until well combined.
- Now add the egg, and mix again.
- Scoop small chunks out of the bowl and roll them by hand into balls (around the size of a pickled onion) and place them on the trays.
- Squish them down with the back of a fork and make a 'criss cross' pattern on the top of each biscuit.
- Place in the oven for 10-12 minutes, until golden around the edges.
- Leave to cool for 10 minutes.
- Enjoy!
These super easy three ingredient peanut butter biscuits will harden while they're cooling (don't worry, they're not hard enough to chip a tooth on!) and they will keep for around three days in a jar.
